I have to admit, I’m pretty basic when it comes to my favorite cookie. Chocolate chip cookies have always been my number one. And I have a rule for myself that I only eat baked goods that are home made and because I’d have to put in the time to bake something when I want it, the rule keeps me from eating chocolate chip cookies and other baked goods like a ravenous raccoon raiding a garbage bin. Well, this super easy chocolate chip cookie bar recipe is bringing me dangerously close to raccoon level. Drop the batter into a pan and 25 minutes later I can have my favorite cookie, only thicker and gooey-er. Watch out!

So why is it called a bar cookie?

Chocolate chip cookie bars are actually a bar dessert rather than a cookie. Chocolate chip cookies are dropped onto a pan in individual serving size mounds, while bar cookies are baked in a baking dish and sliced into individual sized pieces. The flavor outcome is very similar, and I find bar cookies to be even faster and easier than cookies!

Honestly, these are SO easy! Don’t overthink it - it would be difficult to mess these bars up.

Here’s my dish saving advice - you can avoid using additional bowls by mixing the baking soda and salt into the sugars before you add the butter, then mix in everything else in the same order as listed in the directions and voila! I love cutting down on dishes anywhere I can.

Chocolate chip cookie bar variations

Try adding nuts - just mix in 1/2 cup of your nut of choice at the same time that you mix in the chocolate chips. Pecans, pistachios, or macadamia nuts are some good options.

Why are my chocolate chip cookie bars dry?

If your cookie bars are dry, you may have added too much flour to the batter. These should be more similar to a brownie than a cookie - less flour to liquid ratio. The batter will be thick but not hard to work, with a thickness that is thicker than cake batter and thinner than cookie dough.

To add more moisture to your batter, try adding an additional tablespoon of melted butter until the batter consistency looks thinner.

What kind of chocolate should I use for baking cookie bars?

I recommend semi-sweet chocolate chips, milk chocolate chips, or dark chocolate chips depending on your preference. I prefer semi-sweet, so that is what I used, but any of these work well!

How should I store chocolate chip cookie bars?

Store store chocolate chip cookie bars at room temperature in an air tight container for up to two days, or store in the refrigerator for up to five days. If stored in the refrigerator, pop them in the microwave for five to ten seconds to warm them up and they’ll taste like they’re fresh baked!

You can also freeze store chocolate chip cookie bars easily. Just place (fully baked and cooled) in an air tight freezer container and store in the freezer for up to three months. Remove from the freezer and let them thaw in the refrigerator 24 hours prior to serving.

  • 1/4 teaspoon baking soda

  • 1/4 teaspoon salt

  • 1/2 cup butter (melted and cooled slightly)

  • 1/3 cup packed dark brown sugar

  • 1/3 cup granulated sugar

  • 1 egg

  • 1 1/4 teaspoons vanilla extract

  • 1 cup chocolate chips

  1. Preheat oven to 350℉. Line an 8 x 8 or 9 x 9 baking dish with parchment paper.

  2. Melt the butter and allow it to cool slightly.

  3. Mix together flour, baking soda, and salt and set aside.

  4. Mix together the butter, brown sugar, and granulated sugar. Add the egg and vanilla and mix until well combined.

  5. Add the flour mixture to the butter mixture and mix until combined. Stir in the chocolate chips.

  6. Pour the mixture into the parchment lined pan and bake for 25-30 minutes, or until the edges become golden brown and the middle puffs up slightly.

  7. Let cool and set in the pan for about 1 hour or until bars are completely cooled.
