Pink Grapefruit Loaf Ingredients

Pink Grapefruit - I love baking with citrus and pink grapefruit is no exception. It has a powerful flavor profile that is sweet, tart, and slightly woodsy. Loaded with vitamin C and high in fiber, this tangy fruit also has loads of health benefits.

Low Fat Greek Yogurt - I love to bake with greek yogurt for so many reasons. It is a healthy option, packed with protein, calcium, vitamins, and probiotics. Baked goods will turn out dense and moist (yes, I said it!), not to mention the tangy flavor of greek yogurt pairs perfectly with grapefruit in this recipe.

Pink Grapefruit Loaf Recipe Tips

Microplanes are the Best Tool for Zesting - Avoid lumpy chunks of peel in your bread and drizzle by using a microplane to get very fine grate from the pink grapefruit peel.

Use tin foil - Check the bread halfway through the bake and add a tin foil tent over the top of the pan if the bread is browning too quickly. This will prevent excess browning on the top of the loaf.

Adjust as You Go - With every recipe, I recommend tasting along the way and adjust the amount of any of the ingredient to suit your taste.

Sugar Substitutes - Honey pairs nicely with citrus and thus would make a great substitute for sugar in this loaf.

Egg Substitute - Omit the egg and mix together three teaspoons baking soda with three tablespoons vinegar. This mixture will substitute for the three eggs in this recipe.

Pink Grapefruit Loaf Recipe 

Loaf Ingredients

  • 1 3/4 cup All Purpose Flower

  • 1/2 teaspoon Baking Powder

  • 1/2 teaspoon Salt

  • 1/2 cup Unsalted Butter, Softened

  • 1 1/3 cup Granulated Sugar

  • 2 tablespoons Zest from Pink Grapefruit

  • 3 Eggs

  • 3 teaspoons pink grapefruit juice

  • 1/4 cup Low Fat Greek Yogurt

Icing Ingredients

  • 1 cup Powdered Sugar

  • 5 teaspoons pink grapefruit juice

  • 1/2 teaspoon Zest from Pink Grapefruit

Directions

Preheat oven to 350 degrees Fahrenheit and grease the inside of a loaf pan with your favorite cooking spray.

Mix dry ingredients together. In a medium bowl add flour, baking powder, and salt. Mix together with a whisk or a fork. Set aside.

Cream butter and sugar. In a big bowl with a stand mixer or a handheld mixer, cream butter and sugar together until fluffy, about three minutes.

Add pink grapefruit zest and mix together.

Add in eggs one at a time, mixing in between each addition.

Add pink grapefruit juice.

Add greek yogurt and dry ingredients in increments, alternating between each addition until incorporated. Careful not to over mix the batter here.

Scoop batter into loaf pan and smooth out the top of the batter.

Place in the oven and bake on 350 degrees Fahrenheit for 40-50 minutes. Insert a toothpick or a knife into the loaf and if it comes out smooth then the loaf is ready. Let the loaf cool for five minutes, then run a knife around the edge of the pan to loosen the bread. Turn the pan over onto a plate or cooling rat to release it from the pan. Flip the bread back upright and let cool completely before adding the drizzle.

Prepare the icing. Mix the powdered sugar, pink grapefruit juice, and zest together with a fork or a whisk until completely smooth. Pour over the loaf, coating completely and allowing the drizzle to run down the sides.

Slice it up and enjoy!
